These are one of the most delicious things ever… I probably could’ve eaten all of them myself!


You can use leftover mashed potatoes (is that even a thing?? leftover potatoes?), packaged potatoes or even just boil up a batch of potatoes and mash them! I use cheddar because I love the flavor, any cheese will work of course, you could even use 1/2 a cheese string if it’s all you have on hand!


Be sure to try to seal the cheese in the potatoes and make sure the wrapper is completely sealed. This will help avoid leaking and splattering.


Loaded Mashed Potato Egg Rolls. Crispy egg rolls stuffed with creamy loaded mashed potatoes and gooey cheese! This may be my favorite egg roll recipe yet!


  • 2 cups prepared (or leftover) mashed potatoes
  • ¼ cup bacon bits or crumbled cooked bacon
  • 2 green onions, thinly sliced
  • 8 sticks of cheese, approx. 3" long by ¼" square

  1. Combine cooled mashed potatoes, bacon bits, green onions, egg,
    onion powder, garlic powder and pepper in a large bowl. Mix until well combined.
  2. Wrap about 3 tablespoons of the mashed potato mixture around each stick of cheese trying to ensure it is completely covered (this helps prevent leaks).
  3. Lay each egg roll wrapper out with a corner pointing towards you. Place your mashed potato and cheese filling in the center of each wrapper. Fold in the sides and roll the wrapper tightly. Use a dab of water to secure the tip of the wrapper. (If you don"t know how to roll an egg roll it usually shows on the package).
  4. Note: It is important to make sure the sides of the wrapper are tucked in holding the ingredients in. If they leak, it can cause splattering.
  5. Preheat oil to 350 degrees. Fry each egg roll for about 4-5 minutes or until browned and crispy.
  6. Serve hot with sour cream for dipping.

If you’re anything like me, I always seem to make extra mashed potatoes ‘just in case’. I’m not sure why because I’ve never run out but somehow I always end up with leftovers.


Of course they’re good to just reheat or to use in Loaded Mashed Potato Egg Rolls but my absolute favorite way to enjoy them is this recipe. Mashed potato pancakes make leftover mashed potatoes (with a few easy additions), into a new family favorite!


You can just add a little cheese and seasonings to make a side but if you want to turn this into a light meal or hearty lunch, add in some leftover chicken or turkey (or even stuffing)!

Mashed potatoes are easy to make (and even easier to make in the crock pot) so I often will boil up some potatoes just so we have enough mashed potatoes to make these mashed potato cakes!


You can really get creative with the seasonings and add ins in this easy recipe! Pretty much anything in your fridge is game… add some spices & herbs, a little bit of meat/protein and whatever veggies you have on hand!


A few of our favorite combos include:


  • ham, cheddar, red bell pepper, squeeze of dijon
  • leftover taco meat, corn, cheese
  • pepperoni, oregano, green pepper, mozzarella
  • leftover chicken/turkey, poultry seasoning, leftover stuffing
  • sundried tomatoes, oregano & basil, fresh mozzarella
  • anything in your fridge

They can be topped with sour cream, extra bacon bits, sautéed veggies, ketchup, sausage and eggs, basically anything you might have handy!

I’ve spent most of this week feeling pretty swamped and miserable - I have an essay due next week as well as plenty of other work to do and it just felt like regardless of how hard I worked, I was still behind schedule!


however, I really knuckled down this weekend and I’m now feeling much more on top of things. really feel like I know where my essay is going after today which is SUCH a great feeling! so I thought I’d spend the last few hours before I went home to make dinner before choir practice with a little (very early) christmassy treat - salted caramel cappuccino with sparkly gold sprinkles! I’m easily pleased ✨☕️ I might be a summer baby but autumn and winter are my favourite times of year!

I took the photo on the left a few days ago but it could have been taken pretty much any day recently - the library’s become my second home of late! it’s only week 5 but there’s already so much to do. reading, presentations, more readings, essays, even more reading…oh, and dissertation research too! 😴


I love my degree & I’m finding it more interesting than ever but I’m also feeling pretty stressed out by it all right now - turns out being a finalist is pretty tough, who knew! trying to stay sane with the occasional Gilmore Girls episode and coffee breaks with friends ☕️ I’ve got this!

Classes start on Monday so I’m back in my favourite coffee shop, trying to do a little reading to prepare and get back into the swing of things. I don’t feel ready to be a third year but I’m looking forward to getting back into studying after a pretty relaxed summer!

Starting with some reading for my class on Ancient Sexualities. Very pleased to be back at it again ☺️



So I actually forgot what day of the 100 days of productivity I was on… so… there goes that! Let’s see… I recently studied in the University of Michigan law library which was productive bc it was so quiet. Afterwards I went to go get some pie at a local coffee shop. I pretty much finished my junior year of hs which is odd to me, but I have no time to feel startled because I have to study for SAT subject tests and apply to universities.

ALSO! I’M GOING TO THE GOT7 FLY IN CHICAGO CONCERT! If anyone else is going to that concert….MESSAGE ME! I was planning to make a little meet up before the concert, so if you are going… feel free to message me so we can fangirl together!



Committing studyblr crime by working on my bed but I’m exhausted and it’s a Sunday oops. Writing an essay for English and highkey losing motivation do tryna find some inspirational quotes to keep me going so I don’t lose my mind. Oh well my midliners finally came after a month of waiting but it was soooooo worth it they have no exaggeration changed my life I feel replenished. And I love my fluffy socks a lot



Finally got my ass out of the house to get some work done.

Perhaps one day my well of cake ideas will run dry, but thankfully that day is not today. Being able to incorporate seasonal ingredients and savoury herbs into sweet treats keeps the creativity following, and today I am happily sharing this Lemon Thyme Cake.


I am not a rookie when it comes to incorporating more savoury elements into my cakes, however I think I"ve only scratched the surface when it comes to herbaceous sweets. My go-to is to infuse herbs into a simple syrup that gets generously brushed onto each cake layer. This time, I took a step further and added freshly chopped thyme straight into the cake batter.

Adding the fresh thyme into the cake batter really helped the flavor shine through all of the butter and sugar. But if I am being honest, I think the real star is the lemon curd buttercream. Now, I"ve made lemon curd and I"ve made buttercream plenty of times, but the product of combining the two together proved to be otherworldly. Sometimes straight lemon curd can be a bit tricky as a cake filling, so I opted to mix it with my trusted Swiss meringue buttercream. Swiss meringue buttercream is fairly mild in flavor, making it the perfect base for other flavorings. But seriously, lemon curd buttercream - you guys, it"s like heaven! Light and lemony - not too tart, not too sweet. But just for funsies, I took a couple teaspoons of leftover curd and swirled it over the buttercream just before topping it the next layer of thyme-soaked lemon cake. Now how good does that sound?!?!

Homeowners complain about having too much storage space about as often as they do about having an overabundance of cash. It just doesn"t happen.


Nearly every home, regardless of its size, has a shortage of accessible storage space. Need proof? Take a peek into the average garage and you"ll likely find it crammed full of bicycles, lumber, garden tools, trash cans, outdoor power equipment, sports gear and car-care supplies.


An occasional spring-cleaning can help you reorganize and reclaim some space, but it"s only a matter of time before the clutter returns. What you really need is more space, and one of the best ways to find it is to create it by building a backyard storage shed.


At 10 x 16 ft., this handsome garden shed is large enough for most backyard needs. We"ve added an interior partition so it serves double duty as a storage shed and an all-weather children"s playroom. Double doors on the side and gable end make it easy to access the space.


We built the Colonial-style garden shed shown here from a set of mail-order building plans. The 10 x 16-ft. outbuilding has easy-to-install plywood siding, three large windows and two pairs of doors. The entire building could be used for storage, but we decided to divide the interior space into two separate areas: a 4 x 10-ft. tool-storage area and a 10 x 12-ft. children"s playroom.


It"s hard to say exactly how much it will cost you to build this shed. Lumber prices fluctuate almost daily and vary widely from one region of the country to another, but figure on spending between $1600 and $2000. Before starting construction, take your plans to your local building department and apply for a building permit.

Step 1: Starting At The Bottom



The shed we built rests on a foundation made up of 12 solid-concrete blocks. The 4 x 8 x 16-in. blocks are arranged in three rows spaced 59 in. apart. These blocks are typically set directly on the ground, but we put down a 4-in. bed of gravel first because our site occasionally receives groundwater. The gravel will keep the soil beneath the shed from eroding or becoming soggy.


After laying out the 12 blocks, use a straight 2 x 4 and a 4-ft. level to ensure that all the blocks are level. Shim up any low blocks with strips of asphalt roofing, cedar shingles or 2-in.-thick concrete patio block. Next, form each front and rear band joist by nailing a 2 x 6 to a 2 x 8 mudsill. Set the mudsills on top of the blocks running across the front and rear of the shed. Cut a third 2 x 8 mudsill to fit along the tops of the center row of foundation blocks.

A Folding Surface. In my own laundry room, I have a plain white laminate countertop where I do all the folding – just that 2 x 4’ amount of space makes all the difference in the world. It’s not just a few beach towels that hang out there on a daily basis, in our busy home there are many piles of clothing being folded and sorted and sent to their destination. A Sink. Space and budget permitting, a sink is more of a luxury, but one I plan to incorporate into any future home build. A basin with faucet that’s ready to to rinse muddy or stained clothing is definitely a plus in any active household.

Our main washer/dryer area is almost identical to this one from Country Girl Chic. It already has built-ins installed that will soon be painted white. But I love the shelf. I might need to do that! So this side of the laundry room is pretty much taken care of. Not much will change.

Now onto the opposite side of the space. This space needs to serve as both a drying area and storage unit. I love what Tracy from Beneath My heart did with the built-in bench that also serves as a storage space and it has hooks. And it’s no secret that I love the two tone look mixed with grays and black!

I’m sort of loving this entire space found on

BHG. It is gorgeous and serves so many purposes. The bench with open shoe storage, the hooks and extra storage space above. Love.

I was actually envisioning something like this unit from Midwest Living from the beginning. I was thinking I could do shoe storage on one side, and cute display of laundry items on the other side and then instead of hooks I could do a rod. Oh the decisions!

I like this look from Muse Interiors . I could easily keep one cubbie for the kid’s items and turn the other into a drying rack for laundry. Not to mention every detail of this space is perfect.

We don’t have front loading washer/dryer so I couldn’t do this, but I could definitely build a folding shelf and floating shelves (tongue twister) on the opposite side. I really do love this sleek look (PS this entire laundry room from In The Fun Lane is super cute).
